Meal Prep & More

This week has been...a lot. It all started with a lovely gift of a snow day on Monday, which allowed me to work from home and watch the snow cover the city streets instead of trudging to work. 

But my biggest savior this week was meal prep! I've {very recently} gotten in to a routine of cutting up and separating my meats right when I get home from the grocery store. It sounds silly but it makes such a difference in the time it takes for me to get dinner ready and that makes the whole rest of the night more relaxing. If you haven't done this, try it next time you go food shopping!

All I do is cut up my chicken, season it, and then stick it in a Ziploc bag before I stick it in the freezer and then do the same thing with my red meat or whatever other meat I bought for the week. Then I go through what else is in the kitchen and match a grain and a vegetable with each of the portions I have set aside. Write that in my Simplified Planner and I'm good to go for the week. No more planning needed!

As work gets even more hectic, this is a saving grace. And this week, I added a dog to the mix! Unfortunately he's my close friend's so I do have to return him today but it definitely taught me that I need to wait a little bit before getting a dog of my own! Between my attempt to have a social life and my love of sleeping, I'll have to wait until I have the spare time to give up a little bit of each of those. 

I'll be spending the rest of the day getting my ducks in a row for this week, pulling recipes, doing laundry and all that fun stuff.
